Ingredients:
2 lbs ground turkey (99% lean)
1 Tbsp avocado oil
4 tsp chili powder
1 tsp salt
3 cups zucchini, diced
3 cups yellow bell pepper, diced
4 Tbsp sour cream
4 Tbsp guacamole
2 tsp cilantro, chopped
Instructions
In a large pot over medium-high heat, combine the ground turkey and avocado oil. Allow the turkey to brown while breaking it up into small pieces. Once fully cooked, transfer the cooked turkey to a slow cooker along with the chili powder, salt, diced vegetables, and enough water to cover the ingredients. Cook on low for 4 to 6 hours or until the vegetables reach the desired tenderness. Ladle 2 1/2 cups of soup into 4 bowls and garnish each bowl with 1 Tablespoon of sour cream, 1 Tablespoon of guacamole, and a 1/2 teaspoon of cilantro if desired. Enjoy.
Tip:
Avocados are packed with nutrients, as well as monounsaturated fats. These are healthy fats that work to lower LDL cholesterol without affecting the good HDL cholesterol.
