Slow Cooker Broccoli Cheddar Soup

Ingredients:

  1. 6 Cups Broccoli Florets

  2. 1/4 Cup Yellow Onion, Diced

  3. 2 Garlic Gloves, Minced

  4. 1/4 Teaspoon Kosher Salt

  5. 1/4 Teaspoon Black Pepper

  6. 1/4 Teaspoon Nutmeg

  7. 4 Cups Low-Sodium Vegetable Broth

  8. 1 Tablespoon of Water

  9. 1/2 Cup Plain Greek Yogurt

  10. 1/4 Cup Warm Water

  11. 1 2/3 Cup Reduced-Fat Cheddar Cheese, Shredded

Instructions

Add broccoli, onion, and garlic to slow cooker. Add salt, pepper, nutmeg, and vegetable broth to slow cooker. Stir to combine. Cook on low for 4 to 5 hours or high for 2 to 3 minutes.
