Slow Cooker Beef Vegetable Soup

Ingredients:

  1. 1 3/4 Lbs Boneless Lean Beef Chuck, Trimmed of Fat and Cut into Fine Strips

  2. 2 Cups Reduced-Sodium Beef Stock

  3. 1 Teaspoon Salt

  4. 6 Cups Frozen Non-Starchy Vegetable Mix, Broccoli & Cauliflower

  5. 1/2 Cup Fresh Parsley, Chopped

  6. 1/4 Cup Chives, Sliced

Instructions

Combine the beef, stock, and salt in a slow cooker and cook on high for 2 hours until tender. Once the beef is tender, add the frozen vegetables and cook for 40 minutes until veggies are tender. Garnish soup with chives and parsley. Enjoy.


Tip:

Broccoli has a variety of health benefits and it is so tasty. Broccoli even helps maintain a healthy heart. Next time, you need a vegetable for dinner, make broccoli.
