Shrimp Gumbo

Ingredients:

  1. Cooking Spray

  2. 1 Small Red Bell Pepper, Chopped

  3. 1 Small Green Bell Pepper, Chopped

  4. 1/4 Cup Onion, Diced

  5. 1 Cup Diced Tomatoes

  6. 1/2 Cup (4 Oz) Low-Sodium Tomato Juice

  7. 1/2 Teaspoon Hot Sauce

  8. 1/2 Cup Okra

  9. 3/4 Cup Water

  10. 1 Teaspoon Cajun Seasoning

  11. 10 Oz Shrimp, Peeled, De-veined, and Raw

  12. 10 Oz Fresh Crab Meat

Instructions

Heat a large skillet or medium pot over medium-high heat. Lightly grease with cooking spray. Sauté the bell peppers and onion for about three minutes, stirring occasionally. Add the tomatoes, tomato juice, and hot sauce. Stir for an additional one or two minutes. Mix in the okra, water, and Cajun seasoning. Continue to stir. Reduce the heat to low, then cover and simmer for about 10-15 minutes. Turn the heat back to medium-high, and add in the shrimp. Continue to cook until shrimp is pearly and opaque. Add the crab meat and continue to stir. Remove the pot from the burner and let sit for about five minutes to allot the sauce to thicken. Enjoy.


Tip:

Crab meat is full of protein which can be very important for building and maintaining muscles. Crab also contains high level of omega-3 fatty acids.
