Sheet Pan Chicken Piccata

Ingredients:

  1. Cooking Spray

  2. 2 Tablespoon Butter, Melted

  3. 1/2 Cup Lemon Juice

  4. 1/2 Cup Chicken Stock

  5. 2 Tablespoon Non-Perell Capers

  6. 4 (8-oz) Raw Boneless, Skinless Chicken Breasts

  7. 1/4 Teaspoon Salt

  8. 1/4 Teaspoon Pepper

  9. 6 Cups Green Beans

  10. 2 Tablespoon Almonds, Toasted and Silvered

Instructions

Preheat oven to 375°F. Line a sheet pan with parchment paper, and spray lightly with cooking spray. Whisk together the melted butter, lemon juice, chicken stock, and capers. Pour onto a prepared sheet pan. Season chicken with a 1/2 teaspoon of salt and 1/2 teaspoon of pepper. Place in a single layer on a sheet pan. Toss green beans with a 1/2 teaspoon of salt and 1/2 teaspoon of pepper. Transfer to sheet pain in a separate section from chicken. Place sheet pan in oven and cook for about 20 to 25 minutes or until chicken reaches an internal temperature of 165°F. Pour sauce from a sheet pan into a bowl. To serve, place 6 ounces of cooked chicken and 1 1/2 cups of green beans on 4 separate plates. Drizzle each serving with 3 tablespoons of sauce and sprinkle a 1/2 tablespoon of almonds over the green beans. Enjoy
