One Pan Shakshuka

Ingredients:

  1. 1 Teaspoon Canola Oil

  2. 2 Cloves Garlic, Minced

  3. 2 Scallions, Minced

  4. 1 Small Red Bell Pepper, Seeds and Membranes Removed, Chopped

  5. 42 Oz Canned Diced Tomatoes ( 1-28 Oz Can and 14.5 Oz Can)

  6. 1 Teaspoon Ground Cumin

  7. 1/2 Teaspoon Paprika, Preferably sweet Paprika

  8. Pinch of Cayenne Pepper

  9. 1/4 Teaspoon Salt

  10. 1/4 Teaspoon Pepper

  11. 12 Large Eggs

  12. 2 Oz Low-Fat Crumbled Feta

  13. 1/2 Cup Fresh Cilantro, Chopped

Instructions

Heat oil in a medium nonstick or cast iron skillet to sweat garlic, scallions, and bell pepper for about 2 minutes until translucent. Add tomatoes and spice. Bring to a simmer and cook for about 5 minutes. Press the back of a tablespoon into the tomato mixture to create 12 wells. Crack an egg into each indentation, cover with a lid, and cook for about 5 minutes until the egg whites are firm. Uncover, remove the pan from heat, and garnish with feat and cilantro. Serve hot.


Tip:

Garlic contains antioxidants that may help prevent Alzheimer's Disease and Dementia. Garlic is very easy and delicious to include in your current diet.
