Ingredients:
4 Slices Jennie-O Extra Lean Turkey Bacon
6 Cups Cauliflower Florets
3 Cloves Garlic, Minced
1/3 Cup 1% Buttermilk
1 Tablespoon Butter
3/4 Teaspoon Salt
1/2 Teaspoon Black Pepper
2 Tablespoon Fresh Chives
1/4 Cup Reduced-Fat Cheddar Cheese
Instructions
Cook the bacon until crisp in a skillet and set aside, crumble. Boil cauliflower and minced garlic until soft which usually takes 15-20 minutes. Drain the cauliflower and minced garlic and return to pot. Preheat the oven to 350 degrees. Combine buttermilk, salt, pepper, cauliflower, garlic, and puree with blender. Mix in the 1 tablespoon of chives, transfer to casserole dish. Top with cheese, bacon and remaining chives. Bake until cheese melts which is five minutes. Enjoy.
Tip:
Cauliflower provides antioxidants and several health benefits. Cauliflower also contains fiber.
