Jambalaya Soup

Ingredients:

  1. 1 Teaspoon Olive Oil

  2. 1/4 Cup Sweet Bell Pepper, Any Color and Chopped

  3. 1/4 Cup Celery, Chopped

  4. 1 Link of Chicken Sausage, Thinly Sliced

  5. 1/2 Cup Italian Diced Tomatoes

  6. 1/2 Cup Cauliflower Rice, Fresh or Frozen

  7. 1 Cup Lower Sodium Chicken Broth

  8. 1/4 Teaspoon Cajun Seasoning

  9. 1/4 Teaspoon Paprika

  10. 1/4 Teaspoon Dried Oregano Leaves

  11. 1/4 Teaspoon Dried Basil

  12. 5 Ounces Raw Shrimp, Peeled and Deveined

Instructions

In a medium-sized saucepan, heat olive oil over medium-high heat. Saute peppers and celery until tender for about four to five minutes. Add the sausage and cook until browned for about five more minutes. Add diced tomatoes, cauliflower rice, chicken broth, Cajun seasoning, paprika, oregano, basil, and shrimp. Bring to a boil and then lower the temperature to medium-low heat and cook for about five more minutes or until shrimp is cooked through and cauliflower rice is tender.


Tip:

Soup is a healthy and nutritious meal to eat when homemade. This soup is filled with protein and vegetables.
