Fish Taco Cabbage Bowl

Ingredients:

  1. 2 1/2 Pounds Halibut or Other White Fish

  2. 2 Teaspoon Olive Oil

  3. 2 Teaspoon McCormick's Louisiana Cajun Seasoning

  4. 1/2 Teaspoon Cumin, Ground

  5. 1/2 Teaspoon Chili Powder

  6. 6 Cup Green Cabbage

  7. 1/2 Red Onion, Chopped

  8. 6 Ounces Avocado Slices (optional)

  9. Mexican Blend Cheese, to taste

  10. 1/4 Cup Bolthouse Classic Ranch Yogurt Dressing

  11. 2 Tablespoon Lime Juice, Fresh-Squeezed

  12. 2 Teaspoon Green Tabasco Sauce

  13. 1/4 Teaspoon Salt

Instructions

Mix the McCormick's Louisiana Cajun seasoning, ground cumin, and chili powder in a small dish. When ready to cook, pat the fish dry with paper towels, then rub both sides with 2 teaspoons of olive oil followed by the McCormick's Louisiana Cajun seasoning mixture. Whisk together the Bolthouse classic ranch yogurt dressing, lime juice, green Tabasco sauce, and salt to make the dressing. Cook the fish for about four minutes on the first side. Turn gently and cook for about four minutes more on the other side or until the fish flakes away with a fork. While the fish cooks, mix the red onions into the cabbage mixture and stir in enough dressing to barely moisten the cabbage. When the fish is done, let cool slightly on a cutting board. Fill a bowl with 1/4 of the cabbage mixture and top with the desired amount of fish. Drizzle a little more dressing over the top. Serve right away, with guacamole if desired. Cheese it up!


Tip:

Cabbage is packed with nutrients including Vitamin C. Cabbage also helps improve digestion.
