Fish Sticks with Homemade Dipping Sauce

Ingredients:

  1. 2 lbs Cod Fillets, Sliced into 16 (2-oz) sticks

  2. 2 Tablespoon Parmesan Cheese

  3. 6 Tablespoon Almond Flour

  4. 1/4 Teaspoon Salt

  5. 1/4 Teaspoon Ground Black Pepper

  6. 6 Cups Green Beans, Washed and Trimmed

  7. 2 Tablespoon Lemon Juice

  8. 2 Tablespoon Dijon Mustard

  9. 4 Teaspoon Extra Virgin Olive Oil

  10. 6 Tablespoon Light Mayo

  11. 1/2 Cup Fresh Basil, Chopped

  12. 1 Clove Garlic, Finely Minced

Instructions

Preheat the oven to 425 degrees. Line a sheet pan with parchment or foil and spray with non-stick cooking spray. Combine Parmesan cheese, almond flour, salt, and pepper. Coat both sides of the fish with flour mixture. Place on the prepared sheet pan and bake for about 4 to 6 minutes until cooked. While fish bake, steam green beans. Bring an inch of water to a boil in a large saucepan fitted with a steamer basket. Add green beans, cover, and cook until tender-crisp about 3 to 4 minutes. For lemon caper mustard sauce, combine lemon juice, mustard, and extra virgin olive oil. Mix well. For basil aioli, combine the mayo, basil, and garlic. Mix well. Enjoy.
