Ingredients:
10 Sprays of Non-Stick Spray
1/2 Cup Green Onion, Finely Chopped
6 Oz Cooked Chicken Breast, Shredded
4.5 Oz Can Chopped Green Chilies
2 Teaspoon Chili Powder
1/4 Cup Old El Paso Enchilada Sauce
1 Cup Canned Low Sodium Diced Tomatoes
1/2 Cup Low-Fat Cheddar Cheese, Shredded
1 Cup Low-Fat Pepper Jack Cheese, Shredded
3/4 Cup Plain Low Fat Greek Yogurt
4 1/2 Ounces of Avocado, Sliced
1/2 Cup Fresh Cilantro
Instructions
Heat oven to 350 degrees. Spray a 13x9 baking dish with 5 sprays of cooking spray. Heat 10 or 12-inch large skillet over medium-high. Add 5 sprays of cooking spray and onion cook for 5 minutes or until onion is soft. Reduce heat to low. Add chicken, green chilies, chili powder, tomatoes, and 1/4 cup of the Enchilada sauce. Stir to combine. Remove from heat. Stir in cheddar cheese. Transfer the chicken mixture to the baking dish. Top evenly with pepper jack cheese. Bake for 10-15 minutes. Turn the oven control to broil. Place baking dish about 5 inches from broiler; broil for 1 to 2 minutes or until cheese is golden and bubbly. Remove from the broiler. Top with avocado and cilantro. Serve.
